This week we have a demonstration from Simon Taylor, Captain of GB’s Butcher’s Team. Simon will demonstrate how to break down a carcass, talk us through what he looks for when selecting quality pork, what to expect in terms of yield, differentiating slow grown rare breed pork from indoor reared pigs when marketing your pork and more.
Simon’s passion for the butchery industry started at the age of thirteen when he took his first job in a traditional high street butchers shop. It was from there that Simon’s love from the industry began to grow and 28 years on he is now the successful owner of Surrey Hills Butchers
Simon understands the importance of keeping the traditional skills alive and aims to train and educate as many butchers as he can during his career. This has led him to Captain Team GB in the World Butchers Challenge where The Brits also produced the World’s Best Pork Product in the form of their Pork Pineapple Corset
This summer he appeared at Groundswell, The regenerative farming event, giving butchery and barbeque demonstrations.
He has also received recognition for his commitment to training young butchers with one of his trainees being names Apprentice of the Year.
